When you are evaluating an Indian spice supplier, two certifications appear on almost every company's profile: ISO 22000 and HACCP. Both relate to food safety, but they are not the same thing โ and understanding the difference helps you ask the right questions and assess real risk.
What is HACCP?
HACCP stands for Hazard Analysis and Critical Control Points. It is a systematic, science-based approach to identifying and controlling food safety hazards in the production process. HACCP was originally developed by NASA and Pillsbury in the 1960s to ensure the safety of food for space missions.
HACCP is a process-level tool โ it applies to a specific production line or product. A HACCP plan identifies:
- Biological hazards (pathogens like Salmonella, E. coli)
- Chemical hazards (pesticide residues, heavy metals, allergens)
- Physical hazards (metal fragments, stones, foreign bodies)
For each identified hazard, Critical Control Points (CCPs) are established โ specific steps in the production process where controls are applied to prevent, eliminate, or reduce the hazard to an acceptable level.
What is ISO 22000?
ISO 22000:2018 is an international standard published by the International Organization for Standardization. It sets requirements for a Food Safety Management System (FSMS) for any organisation in the food chain.
ISO 22000 is a system-level standard โ it covers the entire organisation's food safety management, not just a single production line. It includes HACCP as a component, but goes further to require:
- Management commitment and food safety policy
- Communication with customers, suppliers, and regulators
- Emergency preparedness and response
- Continual improvement and internal audits
- Documented traceability systems
- Supplier evaluation and control
HACCP
- Process-level framework
- Applies to specific products/lines
- Identifies hazards and control points
- No independent certification body required
- Can be self-implemented
- Foundation requirement for ISO 22000
ISO 22000:2018
- Organisation-level management system
- Covers entire food safety programme
- Includes HACCP as a component
- Requires third-party audit and certification
- Renewal audit every 3 years
- Internationally recognised standard
Why You Need Both
A supplier with only a HACCP plan (but no ISO 22000 certification) has identified their food safety hazards โ but there is no independent third-party verification that their system actually works, is maintained, or is applied consistently across the organisation.
A supplier with ISO 22000 certification has been audited by an accredited certification body (like Bureau Veritas, TUV, SGS, or BVQI) and has demonstrated that their entire food safety management system meets the international standard โ including their HACCP plan.
For an international buyer, ISO 22000 certification provides a level of assurance that is verifiable, independent, and time-bound (it requires regular renewal audits).
Other Food Safety Certifications Worth Knowing
- FSSC 22000 โ An enhanced version of ISO 22000 that adds additional requirements from ISO 22002 sector-specific programmes. Widely recognised by global food retailers and GFSI-benchmarked.
- BRC Global Standard โ Commonly required by UK retailers and food manufacturers. Highly respected in the UK and European food industry.
- GMP (Good Manufacturing Practice) โ Baseline manufacturing hygiene and process standard. Required by US FDA and many other regulators.
- Halal Certification โ Covers the entire supply chain from raw material to packaging. Essential for buyers in Muslim-majority markets.
How to Verify a Supplier's ISO 22000 Certification
- Ask for the certification document โ it will name the certification body, the scope of certification, and the expiry date
- Check the certification body's accreditation on the International Accreditation Forum (IAF) database at iaf.nu
- Verify the certificate number on the certification body's own public registry (most have one)
- Confirm the scope covers the products you are ordering โ some certifications cover only specific product lines or facilities
